Carrot Ginger Salad Dressing

2-inch piece fresh ginger, peeled and sliced
tablespoons mellow white miso (or tahini)
tablespoons toasted sesame oil
cup liquid coconut oil, canola or grapeseed oil
In a high-speed blender, combine carrots, onion, ginger, miso and vinegar. Puree until smooth. Add oils, blending until well combined.
- If a thinner consistency is desired, add 1-2 tablespoons water.
